Happy Healthy Cupcakes
These naturally sweetened cupcakes use honey instead of refined sugar and wholemeal flour for a guilt-free treat that’s perfect for lunchboxes or afternoon snacks.

Ingredients
- 100g wholemeal flour
- 50g honey
- 2 eggs
- 50ml vegetable oil
- 1 tsp baking powder
- Optional: grated carrot or apple
Method
- Preheat oven to 180°C.
- Line a muffin tray.
- Mix all ingredients until smooth.
- Spoon into cases and bake for 20 minutes.

Use fruit puree instead of honey or sugar.
Add seeds or nuts for crunch.
