Homemade Pot Noodles
A great way to use up leftover chicken
Ingredients
Egg noodles
Handful of frozen peas and sweetcorn
Leftover chopped chicken
Stock cube
Plain flour or corn flour
Method
Mix 100 ml of water with a stock cube and add 1 teaspoon of flour.
Bring to the boil.
Stir in flavouring – curry powder or soy sauce (whichever you have) – you can add herbs or minced garlic too.
Stir in enough noodles for 2 people and simmer for 2-3 minutes.
Add in chopped cooked chicken ( if you have any).
Add in frozen vegetables and heat for 2-3 minutes.
Eat and enjoy!
