Slow Cooker – Lentil, Bean & Tomato Chilli
Makes around 4 servings. 5-10 mins preparation time
Ingredients
1 large onion chopped
2-3 large tomatoes chopped or 200g tin of chopped tomatoes
3 carrots, finely chopped
2 garlic cloves, crushed
400g tin of mixed beans or any tinned beans – rinsed and drained
75g dried red lentils
1-2 teaspoons of any dried herb mix
Salt and pepper to taste
Method
Add all the chopped ingredients into the slow cooker and cover with lid.
Cook on low for 5 hours or high for 3-4 hours.
Stir well and adjust seasoning to taste.
Serve with rice or couscous and a dollop of plain yogurt or with baked potato – your choice!

You can use any vegetables you like in this recipe…peppers, broccoli, and cauliflower to name a few.
