Ingredients

A little oil for frying
8 sausages
1 large leek, sliced
1 clove of garlic, sliced
100ml water or stock
2 tablespoons tomato puree (or fresh chopped tomatoes)
400g tinned beans (such as black beans, cannellini or kidney beans)
Any fresh herbs for serving

Method

Heat the slow cooker to high.

Heat the oil in a frying pan and brown the sausages all over, making sure you get a good colour on them.

Add the sausages to the slow cooker with the sliced leeks, garlic, stock, chilli flakes and tomato purée.

Cook for a couple of hours then add the beans and cook for another hour.

Season with salt and pepper Serve with mashed potatoes or rice.
